After many attempts, I’ve understood that the only way to get my children to eat fish is to make breaded fish balls. They never say no to breaded balls, especially Bianca, who as soon as sees something that looks like balls on the table, immediately pick them up. Obviously, I always change the recipe: I use different kind of fish or aromatic herbs. Choose to bake the balls if you give them to your kids, instead of cooking them into the frying pan.
- Boil the potato with the skin until tender. Drain and let it cool. Meanwhile, cook the salmon fillet (steam or boil it).
- Once ready, remove the skin and the pin bones from the salmon fillet if present. Smash it with the fork, together with the boiled potato.
- Add the yolk, the grated cheese and a pinch of salt. Shape the mixture into 8 balls and coat into the breadcrumbs.
- Arrange over a baking tray lined with parchment paper, sprinkle with some EV olive oil and bake for 5min at 180 degrees, until golden.
