Ricotta is always present in my fridge. I make lots of recipes with ricotta: cheese cake, filling, pasta, fluffy cakes. Today, I’ve made these croquets You should really try. They are very easy, quick and delicious! Children will love their taste and for an “adult” version, add some Grated Pecorino to the mixture and ground black pepper. Last but not least, they’re perfect the next day, especially for your office lunch.
- Make the ricotta creamy smashing it with a fork. Add the the cooked ham (chopped), the grated cheese and the beaten egg.
- Stir all together, adding breadcrumbs until the mixture becomes more consistent (2 Tbsp Max).
- Shape croquets and coat into the breadcrumbs. Arrange them over a baking tray lined with parchment paper, sprinkle with some EV Olive oil on top and cook at 200degrees for about 7 minutes.
