La Mozzarella In Carrozza

Confit tomatoes, the easy italian recipe for very Sweet, delicious tomatoes

Yields: 2   Prep: 5Min ~ Cooking Time: 2H   Diff: Easy
- 400g Cherry Tomatoes (or datterini)
- 5 tbsp EV Olive oil
- 1/2 tsp Salt
- 1 tsp Sugar
- 2 Garlic cloves
- Oregano to taste


- Rinse tomatoes very well and cut into tsp halves.

- Spread the tomatoes cut sode down over a baking tray lined with parchment paper.

- Season with EV olive oil, salt, sugar and oregano. Add also the garlic cloves.

- Bake at 100 degrees for about 2 Hours. Tomatoes should become shriveled and caramelized, not burned.
