La Mozzarella In Carrozza

Recycling meatballs, tasty and delicious, made with leftover meat, roasted or boiled

- 300g cooked Meat (roasted, stewed or in stock)
- 30g Bread
- 1 Yolk
- 40g Formaggio grattugiato
- 1 Egg white (For coating)
- Breadcrumbs
- Peanuts oil


How many tasty recipes can you make from leftovers? I think it is very important to have a responsible and ethic behavior towards food, to buy the necessary and not the superfluous, to avoid any kind of waste. Today, for example, I’ve made these meatballs from leftover “arrosto” and We really do love the result! Soft on the inside, crispy on the outside. Try them!


- In a mixer, finely chop the meat with the bread (soaked before in milk). Add a pinch of salt and the yolk and stir to combine. Mix until everything is well blended.

- Add the grated cheese and check consistency: if too sticky pour in some breadcrumbs; on the contrary, if too dry, add some milk. 

- Shape the mixture into balls, coat them into the egg white and finally in the breadcrumbs. Deep fry the meatballs until golden.
