Zucchini fritters, an easy to make and delicious snack!

- 1 Zucchini
- 1 Egg
- All purpose flour
- 1/2 tsp Baking powder
- 40g Grated cheese
- 50ml Water, cold
- Salt, Black pepper
- Parsley, finely chopped
- Peanuts oil for frying


These fritters are really tasty and delicious. Perfect hot, much more good cold: you can prepare them in advance and eat after a beach day or as a snack. Everyone will love them!


- Prepare the batter: mix the flour and the cheese, add water, the beaten egg, a pinch of salt and the parsley. Stir to combine until the butter is smooth and with no lumps.

- Cut the zucchini into thin slices and mix in the batter.

- Heat the oil in a large sauce pan and once hot scoop the batter by a tablespoon and fry until golden brown. Drain on paper towel.
