La Mozzarella In Carrozza

Cherry cake, fluffy and delicious, very easy to make

- 240g All purpose flour
- 8g Baking powder
- 2 Eggs
- 1 tsp Vanilla natural extract
- 140g + 10g Sugar
- 100ml Milk
- 50ml Butter, melted
- 350g Cherries, pitted


- Beat the eggs with the sugar and the vanilla flavor until light and creamy.

- Pour in the milk and the butter than add the dry ingredients (flour+baking powder, sifted). Mix to obtain a batter with no lumps. 

- Add 3/4 of the cherries to the batter and stir gently. Pour into a baking tray of 20cm diameter lined with parchment paper and put the rest of the cherry on top. Sprinkle with the sugar (I used canes sugar) and bake at 180 degrees for about 40 minutes.
