No baked yogurt cheese cake, a delicious and refreshing creamy dessert.

- 250g Digestive biscuits
- 125g Butter, melted and cooled
- 2 tbsp Cane sugar
- 400ml Double cream
- 510g Greek yogurt
- 80g Icing sugar
- Juice of 1/2 lemon
- Fresh fruits


- In a mixer combine the biscuits with the sugar and mix until reduced into thin crumbs. Pour over the melted butter and stir well so that the crumbs are perfectly coated. Tip them into a 28cm springform pan and press down very well with a spoon to cover the whole base. Chill in the fridge.

- Combine the greek yogurt with 40g of icing sugar and the lemon juice. Whip the double cream with the other half of icing sugar until firm. Pour the yogurt cream into the whipped cream and stir gently until combined and smooth.

- Tip the cheese cake cream onto the biscuits base and level the surface with a spatula. Chill in the fridge for at least 4-5h or overnight. Before serving, garnish with fresh fruits and whipped cream.
