La Mozzarella In Carrozza

Easy and quick peach galette, a rustic and delicious homemade tarte.

- 2 Organic Large peaches
- 100g Not refined flour (for me whole wheat flour)
- 150g All Purpose flour
- 70g Butter, cold
- 20ml Vegetable oil
- 1 Egg
- 1 Yolk
- 60g Cane sugar
- Pinch of salt
- Biscotti secchi q.b.
- 1 tbsp Peach or Apricot Jam


- Rinse the peaches very well and cut into thin slices. Set them apart.

- Make the pie crust: mix the flours with a pinch of salt, the butter and the vegetable oil until crumbly. Beat the egg with the yolk and pour into the crumbly mixture together with the sugar. Knead until obtaining an elastic ball.

- Roll the pie crust out into a circle over a sheet of parchment paper and sprinkle some biscuits on top. Arrange the peach slices forming a circle and fold dough edges over. Sprinkle with cane sugar and bake at 180 degrees for about 30min.

- Once ready, brush the peaches with the jam and serve the galette with some ice cream or whipped cream.
