A simple vanilla scented cake with strawberries and mascarpone.

Ingredients
- 250g All purpose flour
- 16g Baking powder
- 2 Eggs
- 180g Sugar
- 250g Mascarpone
- 150ml Milk
- 70ml Vegetable oil
- Strawberries

Directions

- Rinse the strawberries and dry very well with some kitchen paper. Set apart.

- In a large bowl, beat the yolks with the mascarpone, vanilla extract and 100g of sugar.

- Stir in vegetable oil and milk, then the flour with the baking powder. Mix very well until combined.

- Beat the egg whites with 80g of sugar until they become white and light.

- Add the eggs whites to the yolks and mascarpone mixture, gradually. Add the strawberries and mix gently to incorporate.

- Pour the batter into a 22cm round baking tray lined with parchment paper, top with other diced strawberries and Bake at 180 degrees for about 35-40min.

- Once ready, dust with icing sugar and serve.
