Third recipe with the Tossini cheese focaccia. What about if I tell you that it is delicious even in a sweet version? Today’s recipe is a sofisticate and gourmet dessert, made with the cheese focaccia! The ingredients would sound strange but let’s think about eating cheeses with jam or honey for example! I think they’re amazing together! I’ve chosen to serve the focaccia with a warm raspberry coulis... Are you curious?
- Make the coulis: rinse the raspberry then dry well with some kitchen paper. Put over medium heat in a small sauce pan and cook until the start to melt. Add sugar and stir. Cook until the mixture will thickened. Pass through a fine sieve to remove the seeds.
- Cut the focaccia into squares and heat over a non stick pan until just warm. Make a small tower with the squares and drizzle over 2 Tbsp of coulis (set aside the rest in a small container and serve it when you give the focaccia). Garnish with pistachio’s powder and serve immediately!
