- 2 Eggs
- 20ml Milk
- 35g All purpose Flour
- 1/2 Tsp baking powder
- 30g Sugar


- Mix together the yolks with the flour and the baking powder. Gradually, add in the milk and stir to combine until creamy. Into another bowl, start beating the egg whites and when they turn airy and white, gradually add in sugar. Continue to whip until they become firm. Combine the yolks mixture into the whites. Pay attention during this passage! You should stir gently, trying not to deflate the batter.

- Brush a frying pan with some vegetable oil and remove the excess with some kitchen paper. Heat the pan and when it is ready, scoop the batter on it (I made two Japanese pancakes at a time). Add 1 tbsp of water into the empty spaces of the pan and cover with a lid. (This creates the steam that will make your pancakes very fluffy).

- After one minute, remove the lid and add another tablespoon of batter over each pancakes. Cover with the lid and wait 2 minutes to cook. Use a spatula to gently flip the pancakes. Cover and cook for other two minutes. 

- When pancakes are ready, put over a serving plate and serve with icing sugar, fresh fruit, whipped cream or maple syrup!
