La Mozzarella In Carrozza

Homemade friselle, a simple and perfect recipe for a banch of delicious and original friselle!

Yields: 7   Prep: 10Min ~ Cooking Time: 45Min   Diff: Medium
- 100g Type 1 Flour
- 300g Semolina flour
- 1 tsp Active Dry Yeast
- 240ml Water
- 8g Salt


- In a bowl, mix the flour and the yeast. Pour in the water and the Salt and knead until rullo combined. Cover with plastic wrap and let it rise until doubled (2 Hours).

- Cut the dough into 7 pieces of 100g each and shape into a log then join the ends. Arrange them over a baking tray lined with parchment paper, cover with a clean kitchen towel and leave them to rise for about 30min.

- Bake the friselle at 200 degrees for 10-15min. Let cool and cut them in half with a sharp knife. Put them back over the baking tray and bake at 170 degrees until golden.
