Be honest: do you like endive? I actually don’t know why I bought it few mornings ago at the greengrocer. I find this vegetable a bit anonymous and I usually avoid it when I can. That morning I decided to usa it as the filling of a focaccia, together with sausage and scamorza cheese. I make my pizza dough but if you are in a hurry you can use the pastry puff or the shortcrust pastry.
- Put the flour and the yeast in a bowling. Add water and stir using a spoon. Than add the oil and start kneading with your hands until smooth. Cover and let it rise.
- In a pan place the endive and a garlic clove and let them stir-fry.
- Once the dough has doubled in size divide it i ti two halves and roll out each of them into two circles. Place one circle on the bottom of a non stick tray than top with the endive, the sausage and the scamorza cheese. Cover with the Other circle. Let it ride again for about an hour.
- Brush the top of the pizza with some extra virgin olive oil than Bake at 200 degrees for 30 min. Cool before cutting it into slices.
