La Mozzarella In Carrozza - Baked tomatoes
San Marzano tomatoes filled with breadcrumbs and grated cheese.

- 4 San Marzano tomatoes
- 2 Tbsp Breadcrumbs
- 2 Tbsp Grated cheeses
- Oregano
- Salt
- Extra virgin olive oil


This is one of my mother recipe. She always made it when summer began. It is very simple and delicious, perfect as a starter but also as a side dish. You need a particular variety of tomatoes, called San Marzano because They are perfectly sweet and tasty. Follow me in the kitchen!


- For the filling: mix together the grated cheese, the breadcrumbs and the oregano. 

- Cut into two slices the tomatoes and remove the internal core. Arrange them on a baking pan and fill with the stuff. Sprinkle with extra Virgin olive oil on top and bake at 180 degrees for about 10min.

- You can also add some cheese on top and bake until melted. Serve with fresh basil leaves.
