Spelt with homemade pesto, green beans and potatoes. Delicious cold

- 150g Dry Spelt
- 100g Green beans
- 1 Potato, medium
- 70g Basil leaves
- 40g Almonds
- 30g Grated cheese
- 60ml Extra Virgin olive oil
- Salt


Homemade food has another taste. Of course, it means time, effort and care but It’s worth it. Today, I’ve made a first dish with spelt, pesto made with basil and almonds, green beans and potatoes. Rich and delicious! 


A - Cook spelt according to the package directions. Mine has cooked 30min. Boil the green beans and the potato diced into cubes until tender. Drain and let cool.

B - For the pesto: rinse and dry the basil leaves.

C - Put the basil leaves in a blender, together with the almonds, the oil, the grated cheese and a pinch of salt. Mix until creamy. If necessary, add 1 Tbsp of cold water.

D - Add 2 Tbsp of pesto into the spelt and stir to combine everything. Chill in the fridge for about 1 hour before serving.
